A Dinner Salad for People Who Hate Salad for Dinner

I understand that you might not want salad for dinner. I usually don’t want salad for dinner, either. But salad doesn’t have to be a dirty word. It also doesn’t have to be the side dish. With strips of chicken, sliced mango, and a creamy peanut sauce, this is one of those prime-time salads. It’s the kind of salad that always leaves leftovers for lunch the next day.

The chicken (if you follow my direction) comes out juicy and tender, while the mango adds a touch of sweet. The peanut sauce adds creaminess and spice, while the cabbage brings the crunch. It’s packed with flavor, texture, and nutrition that will leave you feeling completely satisfied.

Ingredients:

  • 1 lb boneless, skinless chicken breast

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 head green cabbage, shredded

  • 1/2 head purple cabbage, shredded

  • 1 large mango, peeled and sliced

  • 1/2 cup roasted peanuts, chopped

  • 1/4 cup chopped fresh cilantro

For the Peanut Sauce:

  • 1/4 cup creamy peanut butter

  • 2 tbsp soy sauce

  • 2 tbsp honey

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 garlic clove, minced

  • 1 tsp grated fresh ginger

  • 1/4 tsp red pepper flakes

  • 1/4 cup water

Instructions:

  1. Preheat the oven to 400°F.

  2. Place the chicken breast in a baking dish and drizzle with olive oil. Season with salt and pepper. Bake for 25-30 minutes, or until cooked through.

  3. While the chicken is cooking, make the peanut sauce. In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes until smooth. Gradually whisk in the water until the sauce is thin enough to pour.

  4. In a large bowl, combine the bcabbage mix, sliced mango, chopped peanuts, and cilantro.

  5. Once the chicken is cooked, slice it into thin strips.

  6. Add the chicken to the bowl with the slaw mixture and toss to combine.

  7. Drizzle the peanut sauce over the salad and toss to coat.
